Seed potatoes can be a source of interest and learning for children. Set in a shallow box placed in bright light, seed potatoes will sprout clusters of shoots at the tuber “eyes.” The potatoes are planted before the sprouts elongate and break off easily. Small seed potatoes with just one or two sprout clusters can be planted whole. Larger tubers with numerous promising growth clusters can be cut into pieces, each with at least one cluster of sprouts.
